​What is Yonezawa Beef from Yonezawa Sato Livestock?

Yonezawa Sato Livestock's Yonezawa beef is raised over a 33-month fattening period using 25 types of high-quality feed and underground water from the Azuma mountain range. The beef is raised in an environment with extreme temperature differences, and is raised alone to avoid stress, resulting in delicious meat with excellent flavor and high-quality fat.

Normally, cattle are shipped at 28 months, but Yonezawa Sato Livestock extends the age to 33 months or more in pursuit of deliciousness. Even extending the age by one month increases feed costs and the risk of death, but the company works hard every day with its cattle in order to produce high-quality cattle.

Change the cut and brand for each menu

We carefully select cuts and brands for each menu item to provide the best flavor. We use excellent beef from various regions, including Yonezawa beef from Sato Livestock, and offer luxurious dishes that make the most of the characteristics of each cut.

Identifying meat suitable for aging

Even when we say aged meat, aging does not necessarily mean that expensive meat will taste better. Our aging professionals select meat that should be aged and meat that should not, and provide it to customers at the appropriate level of aging.
